Quick Meals series: Super fast veggie noodles

There's ever such a lot of phone calls and emails involved in moving house it would turn out.  Things do actually seem to be moving now and I'm hopeful we'll be moving in January but who knows?  It's all so slow.

At least it's clear that we won't be moving before Christmas - so we will be getting the tree out this weekend.  I had a really lovely afternoon in the local garden centre with the kids recently, giving them an opportunity to choose this year's decoration.  I can't wait.  D knows what it's all about and can help with the decorating and Roo will love looking at the decorations and hopefully not pulling them down!

Quick meals, as ever, are what we are all about.  This gets to the table in less than fifteen minutes.  I used soba noodles for the adults and egg noodles for the littler members of the family.  D wasn't convinced by the soba noodles and while Roo did try the soba noodles she much prefers the egg ones.   This is fantastic for babbled weaning as it has lots of grabbable chunks of vegetables.  Having said that, as most of the vegetables are raw, it's worth waiting until the baby is able to chew and bite rather than just cram it all in.



Stats: Serves two adults and two children

100g soba noodles
50g egg noodles
140g mange tout, cut in half
100g babycorn, cut in half
two small red peppers, cut into thin sticks
sesame seeds

For the dressing
45g rice wine vinegar
45g tahini paste
two teaspoons of agave syrup
30g reduced salt soy sauce

Cook the noodles according to pack instructions.  Cook the baby corn in the same pan for the last three minutes of cooking time, softening them a touch.

In the meantime, make the dressing.  Mix the tahini and two tablespoons of water. Add the rest of the dressing ingredients and mix well.  It may take a little bit of coaxing.

Drain the noodles and baby corn well.  Place noodles on the plate and top with the vegetables, dressing and sesame seeds.
