I find myself, again, getting inspiration from Sensitive Flour.
What do you do when you have a takeaway planned, a glass or two of wine with good friends and a wedding at the weekend and know you're likely to make short shrift of even the extra points allowance? Well, I spend one of the days eating very few points in the day, filling up instead on pointless foods. In this case, it meant a breakfast smoothie for breakfast at one pro point: -
This was made with one banana, a couple of handfuls of frozen berries and a splash of skimmed milk. Try desperately to keep it out of the clutches of your three year old who will help you with it.
Lunch time was this zero point soup. I adapted it a little to serve two rather than four.
Stats: - two servings, zero propoints (if made with a zero point stock cube)
400ml hot vegetable stock
1 medium leek sliced finely
100g cauliflower florets
100g broccoli florets
10 sage leaves
Cook the leeks in the vegetable stock for about five minutes. Add the broccoli and cauliflower and cook for a further ten minutes. Add the sage leaves and cook for a further minute or two. Blend and serve. If you'd like to add a teaspoon or two of parmesan for an extra propoint, go mad.
Sunday soup was made on Friday this week, just to confuse things. I don't normally schedule Sunday soup but needs must. I'm off to a wedding tomorrow (yesterday) and don't hold out much hope for making Sunday soup this week. Not only that but soup actually doesn't fit into the next few days. D and I are off for a trip to Cliveden (we only went last week but it's BRILLIANT) on Monday afternoon and taking soup with me is actually a bit of a pain.
