Sweet potato and leek: Sunday soup

Well, this week has been a good one, although first week back tiredness definitely hit - first weekend is always the sweetest I find. We've tried out Bhel Puri, a newcomer in Reading town centre that's owned by the same people that own a slightly older restaurant in the centre that we didn't rate much.  This, however, was much better.  D tried so many different things.  Best dish in our opinion was the Manchurian paneer - although D rated the hakka noodles highly and the Bhel Puri platter was very unusual.  A good price too.  The three of us were very well fed on £22.

We've also submitted D's school application.  I can't believe my small boy is going to be at school in less than nine months.

Here's this week's soup.  It was born out of needing to use the rest of the sweet potatoes and leeks from last week's soup winter vegetable soup.  You can have leek and potato, so why not sweet potato and leek?  Again, just to prove that soup is cheap - I worked this out at 62p a serving.




Stats: - 5 servings, 3pp each (although you could switch the butter for frylight and drop it to 2pp per serving)

Ingredients: -

10g butter
450g sweet potato, peeled and cut into small cubes
6 leeks, finely sliced
1litre vegetable stock

Melt the butter and sweat the leeks for ten minutes.  Add the sweet potato and stir.  Cook over a medium heat for five minutes.  Add the vegetable stock and simmer for fifteen-twenty minutes, until the sweet potato has softened.

Blend.

You can opt to freshly grate some nutmeg over the top.
