Garlic Roasted Cauli

Yum
Only 1 propoint per serving and a great side dish for all kinds of things.  I served it up alongside the Secret Sausages reviewed a few weeks ago.  I really love the side bonus of this - the beautiful juicy roasted garlic.  I'm a bit of a sucker for it.

Stats: - 3 generous servings, 1 propoint per serving
Ingredients: -
One whole cauliflower, separated into small florets
One tablespoon olive oil
Three fat garlic cloves, bashed a bit to release juices
Salt and pepper

Preheat oven to gas mark 6.  Toss the cauli in the oil and garlic cloves and sprinkle with a generous amount of salt and pepper.  Roast for half an hour, turning the florets over half way through.

I'm thinking that the boiled version will be no more than a distant memory.

What unusual sides do you make with your vegetables?  What unusual vegetable do you like to roast?  Please comment and let me know!
