Sunday soup - 2pp winter vegetable

Welcome to the first Sunday soup of 2014!  I hope you saw out 2013 in a way that you'd want to.  Today is the last day of my Christmas holidays.  I'm sad - it's been a great break.

If you're now looking at getting a good start on the Weightwatchers diet, or if your resolution is to eat more meat-free/more vegetables/more healthily, you can't go far wrong with this recipe.  I don't know about you but I'm ready to return to propoints and counting - I have a couple of Christmas pounds that need shifting.  Okay, okay, maybe three.  

This is filled with vegetables that are in season at the moment and I calculate (minus sriracha which isn't available there) it comes to 71p a serving on the Sainsburys website (it will be even less if you buy larger packs of vegetables).  Not too shabby.



Stats: - 5 servings, 2 propoints each, 129 kcal with 0.1g of saturated fat.

Frylight or similar
2 parsnips, peeled and cut into bitesize cubes
2 sweet potatoes, peeled and cut into bitesize cubes
2 leeks, sliced
1 red onion, diced
2 carrots, peeled and diced
1 litre hot water
1 teaspoon cumin
Sriracha, to taste

Mist a large pan with Frylight and put all of the vegetables in.  Cook on a medium heat for five minutes, stirring regularly to prevent sticking.  

Add the water, cover and cook for a further fifteen minutes, until the vegetables have all softened.  Keep an eye - if the soup is on too high a heat, the water will disappear... 

Add the cumin to the pan and cook for a further five minutes.  

Blend well.  Swirl the sriracha into the top of each serving (means that you can omit for littlies).  As you can see, I still need to work on my swirling.
